Here are a few more details about the Mr. Wilkinson’s range of sauces and pickles, including ingredients.
1. Brown Sauce
This has been a favourite with PJ regulars since day one, on the classic Pope Joan sandwich: Egg, bacon, brown sauce. Simple and tasty!
Mr. Wilkinson’s brown sauce is sweet and spicy, with a base of onions, prunes, apples and molasses, with just a touch of vinegar and fresh turmeric juice for an acid kick, and a special blend of spices.
2. Red Sauce
A good old tomato ketchup, with some onions & apples for sweetness, and some spice just to keep it interesting. Goes with anything and everything!
Look at it- it’s luminous! I love picallilli- I don’t think you can beat a nice sanga of ham and picallilli
My picallilli is a mix of cauliflower, kohl rabi, shallots & gherkins cooked in a gorgeous sauce of mustard & turmeric powders (hence the luminousity!) and sharpened with a good kick of malt vinegar. Delicious!
Don’t be intimidated by the strange name- this is a very approachable and tasty little sauce. It gives a lovely punch of Indian spice, without too much heat.
Added to the base of tomato is some ginger, a good amount of garlic and chilli- seeds removed, to reduce the heat. These are then combined with some black mustard seeds, apple cider vinegar, and all balanced out with a bit of brown sugar to enhance the natural sweetness of the tomatoes.
5. Ploughman’s Pickle
As the name suggests, this is the perfect addition to your ploughman’s lunch; A great foil for a bitey cheddar, maybe a slice of terrine, and some crusty bread.
Cauliflower, carrot, turnip, onions, apple, dates, gherkins and a little garlic and all chopped finely, and cooked out slowly in a sauce of blended spices, lemon juice, malt vinegar & brown sugar, along with a secret ingredient (ok, its Worcestershire sauce!).
6. Pineapple Chutney
This one is a killer match for a good old Gamon steak! Add a fried egg on top, and you’ve got yourself a meal.
The natural sweetness of the pineapple is balanced with onion, a hit of curry spices, and a touch of garlic and salt. White wine vinegar rounds it all out very nicely.
