Honey Almond Cake

Serves 6-8

Using Mr Wilkinson’s Favourite Honey

This is my friend Sarah’s amazing recipe for honey and almond cake. Use whatever fruit is in season. Must be enjoyed with a good cup of tea.

Ingredients:

Bold = available at Hams and Bacon

FOR THE CAKE
100g butter

150g brown sugar
1 tablespoon Mr Wilkinson’s Favourite Honey
2 whole eggs
2 cups ground almond (almond meal)

FOR THE TOPPING
6 plums (or you can use any fruit in season)
1 tablespoon butter
1 tablespoon Mr Wilkinson’s Favourite Honey
1 tablespoon lemon juice (roughly the juice of ½ a lemon)

Method:

FOR THE CAKE
Pre-heat oven to 180°C.

Melt together the butter, sugar, honey. Cool slightly then whisk in eggs and fold in the ground almonds.

Place into desired cake tin and bake for 30-45 minutes. Once cooked, remove from tin, place on cooling wire and rest.

FOR THE TOPPING
Cut the plums (or other fruit) in half, removing the stone.

In a pan bring to the boil the honey, butter and lemon juice, add the fruit and cook for 5 minutes, then place on top of the cake.

Slice and serve with cream or ice cream if ya like!
