Using Mr Wilkinson’s Red Sauce
Who doesn’t love a steak sandwich? The cut of beef used in this recipe is the skirt, but you could also use hangar or banjo which, to me, are amazing and underused secondary cuts.
Bold = available at Hams and Bacon
300-400g skirt steak (I use Warialda Belted Galloway Beef)
4 slices multigrain bread
1 smoked tomato, sliced into 6 slices
1 ball of mozzarella, sliced into 6 slices
crinkle cut chips
Mr Wilkinson’s Red Sauce
Pan fry or cook the steak on a griddle pan on each side for a few minutes.
Slice up, then divide between the bread.
Layer the rocket, smoked tomatoes and mozzarella onto the sandwich, then serve with a side of chips ‘n’ a big dollop of Mr. Wilkinson’s Red Sauce.
